I need some help in detecting each guitar string pitch.
The idea is similar to the tuner concept. I want to detect the pitch of each open string in standard tuning.

I'm considering using fiddle, I tried it but it works in a continuous mode where pitch numbers are printed always.

I want to detect the string pitch when the guitar string is strummed.

If you right-click your [fiddle~] object and select help then you will see some of the options.
Sending a [vibrato( message to [fiddle~] will control the pitch change sensitivity and the [amp-range( message will then output the pitch only during the loudest part of the "strum"..... or better still just after the "pluck". You might find a setting that works well for your needs.
