For example how can I make a piano or guitar in PD. Should I add a midi instrument, how would I do this with pd-for-android?

If you are looking for plucked string like sounds(like guitar) you should check the Karplus Strong Algorithm which is capable to create this type of sound.

Is there a way to identify if Karplus is PD Extended only, or also available in PD Vanilla?
http://www.pd-tutorial.com/english/patches/3-4-2-10-karplus-strong1.pd is the only vanilla compatible patch. The other ones use [z~] from zexy.
