Is this possible using GEM? For instance converting the visible colour spectrum to a number from 1-10... So if I were to put a yellow sheet in front of a webcam, it would produce a different result to a blue one.

i think you can achieve the effect by using [pix_mean_color] and then [rgb2hls] where H is the hue and goes from 0 to 1 according to the color spectrum.
this will obviously give you some pretty rough results, but it should work as a starting point.
